  • 摘要:Monosodium glutamate, sodium salt of glutamic acid is a food additive used to enhance flavor. In this paper, current literature date about the usage purpose, toxicity of monosodium glutamate and idiosyncratic reactions occurring because of monosodium glutamate intake are explained and its safety as food additive are also evaluated.
