  • 摘要:Relationship between coliform numbers and phosphatase value in raw, retentate, evaporated condensed and skim milk medium have been estimated. Coliforms produced low amounts of phenolic compounds. Retentate whole milk and evaporated condensed milks did not contain coliforms. Effect of different temperature on the number of coliforms and phosphatase value in these milk medium have been estimated. Using a temperature of 74 oC for 16 sec was sufficient for destruction of all coliforms and obtaining phosphatase negative value.
