  • 摘要:There are important effects of lactobacilli on the quality of meat and meat products. In this paper, schemes for a rapid and simple identification of lactobacilli from meat and meat products are presented. Identification schemes are primarily based on differences in the fermentation of carbohydrates and other easily determinable physiological characteristics of lactobacilli. However, in most instances the results from the schemes have to be confirmed by determining additional characteristics.
