摘要:The first trading starter culture production was realized in 1980 in Chr. Hansen laboratory in Denmark. The liquid culture has been first produced and then passed the freeze-dried and frozen culture production. Recently the using of frozen concentrated culture containing of 1011-1012 active m.o/gr. in high capacity dairy plants, is increased rapidly. Because this culture can be directly added in milk that will use for cheese and yoghurt production or used for the bulk culture preparation. Thus the preparation of culture and laboratories problems has been disappeared in high capacity factories.
