摘要:In this study, the chemical and microbiological analysis of pesküten samples gathered from Sivas districts. In the chemical analysis, the dry matter 30.96%, water 69.04%, fat 3.66%, non-fat-dry matter 27.30%, total ash 4.92% ash in dry matter 15.95%, salt in dry matter 12.18%, minerals 1.13%, protein 22.08%, sugars and other components 0.295% and the acidity 83.90 SH as mean. As a results of microbiological analysis, the count of total bacteria 3.735x106/g, coliform bacteria 5.69x104/g, yeasts and molds 1.398x106/g, Lactic bacteria 1.997x106/g, Proteolytic bacteria 12.34x104/g and Lipolytic bacteria 10.14x104/g as mean.
