  • 摘要:Proximate content, fatty acid and heavy metal content were determined for the ten by-catch fish species from Muara Angke, Indonesia. The proximate composition was found to be 15.00-17.70% protein, 0.44-2.78% fat, 69.01-76.61% water, 2.69-5.94% ash and 1.32-6.68% carbohydrate, whereas the fatty acid compositions consist of 14.55-36.83% saturated fatty acid s (SFA), 4.92-21.1% monounsaturated fatty acid (MUFA) and 10.9-23.06% polyunsaturated fatty acid s (PUFAs). Among them, those occurring in the highest proportions were myristic acid (C14:0, 0.12-7.59%), palmitic acid (C16:0, 0.02-20.5%), stearic acid (C18:0, 0.42-49.19), oleic acid (C18:1, 0.29-50.09%), linoleic acid (C18:2, 0.23- 44.91%), eicosapentaenoic acid (EPA, C20:5n3, 0.41- 4.61%) docosahexaenoic acid (DHA, C22:6n3, 0.28-3.44%). The rest of the heavy metal content, Pb, Cd, Ni, Hg and As were all present in amounts below toxic levels.
