摘要：El objetivo de este trabajo consiste en profundizar desde una perspectiva histórica, en las raíces del cooperativismo en el sector oleícola mediante la revisión bibliográfica de los diversos estudios realizados a nivel autonómico y provincial en España. En primer lugar se profundiza en las causas que las motivan y en el proceso de la acción colectiva que se desarrolla para su constitución y el perfil de los agricultores beneficiados con estas experiencias. En segundo lugar se establece el nivel de desarrollo empresarial en el ámbito organizativo, humano y tecnológico, y se analizan los condicionamientos que limitan la acción cooperativa a las fases de acopio y transformación con escasa penetración de la cooperación de segundo grado en el envasado y refino. Por último se realiza un estudio empírico de la evolución en una de las provincias españolas en la que la incidencia de este tipo de cooperativas resulta significativa.
其他摘要：The objective of this paper is explore the roots of the co-operative movement in the food oil sector from a historical perspective through a bibliographical review of the diverse studies carried out at the regional and provincial levels in Spain. It explores the causes of co-operatives creation and the profile of the farmers who benefited from the experience. It ascertains the level of business development in the organisational, human and technological spheres, analysing the conditioning factors limiting co-operative action to the stockpiling and production areas, with little penetration in cooperation at the second level of bottling and refining. An empirical study is made of evolution in one of the Spanish provinces where the incidence of this type of co-operative is significant.
