摘要：Este estudio tiene por objetivo investigar los elementos y características de la cultura alemana presentes en la oferta gastronómica de Novo Hamburgo. Se centra en el reconocimiento y las evidencias de los hábitos y costumbres alimentarias traídas por la inmigración alemana y su relación con la oferta turística municipal como diferencial en el turismo cultural. Se adoptó el método exploratorio descriptivo con abordaje cualitativo y entre los procedimientos técnicos se utilizó la revisión bibliográfica y el estudio de campo con entrevistas. Como resultado del mismo se percibió que hay una fuerte relación entre las costumbres traídas por los inmigrantes alemanes y los hábitos alimentarios cotidianos en Novo Hamburgo. Los vestigios de la colonización permanecen presentes en las formas de preparar los platos y en el tipo de alimentos que consume la población en forma cotidiana, mientras que no se identificó una oferta gastronómica que pudiera ser significativa como diferencial del turismo cultural.
其他摘要：Tourism and Heritage: Traces of German Colonization in the Gastronomy of Novo Hamburgo – RS, Brazil. This paper proposes to investigate the cultural elements and characteristics of the German culinary of the Brazilian town of Novo Hamburgo. It emphasizes on the food habits and customs brought in by the German immigrants and how it relates to tourism. The methodology adopted was descriptive exploratory with qualitative approach, and among the technical procedures bibliographic review and a survey with some interviews was used. As a result of this study it was noticed that there is a line among customs brought by German immigrants and everyday eating habits in Novo Hamburgo. The traces from colonization still remain in how food is prepared and what kind of food people eat, however it was not identified a gastronomical supply that could be significant as a differential category in cultural tourism.
