其他摘要：Technical innovations related to dairy industry, specially organic milk, were studied. In one hand, context for organic milk production are developed in historical terms, therefore, European countries role were analyzed because of are the principal promoters of this point of view. In the other hand, productive and trade elements of organic milk and by-products were analyzed under three perspectives: economical, technical and sociological. As well as organic dairy experimental comparative was done between organic and conventional milk; results show significant difference in fat, but acidity is higher in organic milk. The paper concludes with a prospective analysis of organic milk and by-products in Mexican market, and identified special problems in consume.
