摘要：El presente trabajo tiene el propósito de realizar una reseña sobre la historia del Instituto Nacional de la Nutrición, institución que marcó el rumbo inicial de la ciencia de la nutrición en nuestro país. Su creación es obra del doctor Pedro Escudero, mentor de la Ciencia de la Nutrición en Argentina, creador además de la Escuela de Dietistas, la Cátedra de Clínica de la Nutrición y el Curso Superior de Médicos Dietólogos. En 1928 inicia sus actividades en un ala del Hospital Rawson el Instituto Municipal de Enfermedades Metabólicas, que posteriormente fue transferido a la esfera nacional transformándose en el Instituto Nacional de la Nutrición. Fue el primer Instituto de América Latina dedicado al estudio de enfermedades relacionadas con la nutrición, en él se desarrollaban actividades asistenciales, de docencia, investigación y de asesoramiento, con un enfoque integrador de aspectos biológicos, económicos, psicológicos y socioculturales de las problemáticas alimentario-nutricionales. En el marco de las actividades docentes del Instituto se gradúan en 1938 las primeras egresadas de la Escuela Nacional de Dietistas, que fue pionera en la formación de dietistas en América Latina. En 1947 el Dr. Pedro Escudero deja el cargo de director del Instituto Nacional de Nutrición, que es intervenido en 1955 por el Gobierno; a partir de entonces la producción científica disminuyó significativamente y en 1969 fue clausurado por el Ministerio de Salud Pública, del que dependía. En el 2005 se realiza un rescate arqueológico de objetos pertenecientes al Instituto Nacional de la Nutrición encontrados al realizar excavaciones para una construcción en el terreno lindero al predio que ocupaba y en donde se actualmente se funciona el Centro de Salud Mental Arturo Ameghino. En la Escuela de Nutrición de la Universidad de Buenos Aires se exhibe una muestra de fotografías, objetos y publicaciones originales que retratan parte de la historia del Instituto Nacional de la Nutrición.
其他摘要：This paper is intended to review the history of the National Institute of Nutrition, an institution that marked the initial course of nutritional science in Argentina, which was founded by Dr Pedro Escudero, mentor of the Science of Nutrition in Argentina, also creator of the School of Dietetics, the Department of Clinical Nutrition and the Dietitians Doctors Advanced Course. In 1928 he started his activities in a wing of Rawson Hospital, the Municipal Institute of Metabolic Diseases, which was subsequently transferred to the national sphere, becoming the National Institute of Nutrition. It was the first Latin American Institute dedicated to the study of nutrition-related activities, and healthcare, teaching, research and advisory activities were developed there, with an integrative approach to biological, psychological and socio-cultural aspects in connection with food-nutritional issues. As part of the educational activities of the Institute, in 1938 emerged the first graduates of the National School of Dietitians, which was a pioneer in the training of dietitians in Latin America. In 1947 Dr Pedro Escudero leaves his position as Director of the National Institute of Nutrition, intervened by the Government in 1955. Since that moment, the scientific production decreased significantly and in 1969 it was closed by the Ministry of Public Health, on which it depended. In 2005 there was an archeological rescue of objects found during the excavations that were being carried out in a neighboring construction, where the Center for Mental Health Arturo Ameghino currently operates. In the School of Nutrition of the University of Buenos Aires there is an exhibit of photographs, objects and original publications depicting the history of the National Institute of Nutrition.
