摘要:The author attempts to demonstrate the importance of the dairy industry in the evolution of Quebec’s rural economy during the second half of the nineteenth century. The spectacular growth in industrialization, mainly associated with butter and cheese production, testifies to the speed with which rural economies adapt when the conditions necessary for their development exist. Using aggregated figures from the Canadian census, we can analyze the spatial and chronological evolution of a branch of industry that developed rapidly towards regional specialization.
